Vanilla & Chocolate Cupcakes!

Good evening everyone!

I thought I would share with you how to make these gorgeous vanilla and chocolate cupcakes!

Ingredients- Makes 12: 

  • 110g butter – softened
  • 110g caster sugar
  • 110g plain flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 medium eggs
  • 1tsp vanilla extract

 

Method:

  •  Preheat the oven to 180C/350F/ Gas 4.
  • Line a muffin tin with paper cases
  • Put the butter and sugar in a brown and beat until pale and fluffy
  • Sift the flour, baking powder and salt into the bowl
  • Beat the eggs and vanilla and add to the bowl. Beat until just combined.
  • Spoon the mixture into the paper cases
  • Bake for 18 to 20 minutes until risen, golden and firm to the touch.
  • Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

 

To Ice the Cupcakes: 

I made half of the cupcakes with vanilla buttercream icing and half with chocolate. For this, you will need to:

  • Beat 110g butter until soft
  • Beat 110g icing sugar (table spoon at a time)
  • Then mix half a teaspoon of vanilla extract, beat and combine.

For the other half of the icing, it’s very similar:

  • Beat 110g butter until soft
  • Beat 110g icing sugar (table spoon at a time)
  • Stir in 2 table spoons of coco powder

Once you have made up all the icing, you can apply it how you want! I chose to pipe mine as I absolutely love doing it!! Then I just topped them with a few chocolate chips and I now have 12 delicious cupcakes to indulge in!
