How to make Alana’s fruit cake!

If you are anything like me – you’ll have a serious sweet tooth! Since my brother and I were young, my mum has always baked lots of different things and one of my absolute favourites is this very easy to make fruit cake! (oh and bump LOVES it!)

Ingredients:

  • 14oz mixed fruit
  • 6oz glacier cherries
  • 4oz butter
  • 6oz brown sugar
  • 1tsp mixed spice
  • 1/2 tsp bicarbonate of soda
  • 1/2 pint milk
  • 12oz self raising flour
  • Pinch of salt
  • 2 eggs
  • (can add nuts too if you fancy)

Method:

  1. Put mixed fruit, spice, sugar, bicarb soda & milk in pan and place over high heat.
  2. Bring to boil whilst mixing regularly and simmer for 5 minutes
  3. Take pan off the heat and let the mixture completely cool
  4. Next, mix the flour, salt, butter and eggs in the pan with the fruity mix
  5. Put combined mixture in large cake tin
  6. Cook at 170 degrees for about an hour – or until knive comes out clear
  7. Leave cake to cool before removing from tin
  8. Sprinkle with a little icing sugar (optional)

And that’s it, you now have a delicious fruit cake! What do you like to bake?
